This is a super easy and satisfying side to make. Eat it as a side to a main course or mix it into a salad, sit it on a bed or greens, or toss it in some pasta. the options are endless.
Prep time: 10-15 mins
Bake time: 25-30 mins
1-2 zucchini’s of your choice
3/4-1 cup of tomatoes
balsamic vinegar (optional)
1. Pre-heat oven roasted 475 degrees.
2. Slice zucchini into round slices about 1/4” thick. Cut tomatoes into wedge shape.
3. Line a baking sheet with foil and spray or brush with olive oil. Scatter on the veggies. Spray again with olive oil. Sprinkle on salt and pepper . Optional: drizzle on a little balsamic vinegar
4. Put in oven’s middle rack and let roast for 20-25 minutes. Up to 30 minutes max. Warch it. Make sure it doesn’t burn. Turn on broiler and let it broil 3-5 minutes until charred on top.
